Shiraz made from 50+ year old vines in Pokolbin.
Hand picked fruit, 20% with stems retained, was crushed into open vats and plunged twice daily. The wine was then lightly airbag pressed and transferred into French oak barriques of which 50% were new. After 16 months of maturation the wine was lightly egg white fined and then bottled with moderate filtration.
